One of the classic white teas from the Fujian Provence of China, White Peony has a unique herbaceous aroma. Only the young shoot with the two closest leaves are havested, resulting in a slightly stronger flavor than Silver Needle. White Peony (Bai Mu Dan) has a mild flavor and low astringency resulting in a warm, mellow finish. These leaves are of the Fuding variety.
Steeping: 2 teaspoons, 180 degrees F, 4-5 minutes
